Meridian's molasses is extracted during the process of cane sugar production, in which all the beneficial nutrients of the sugar cane are concentrated into the molasses. It is the product of the 'third boil' of the sugar juices. Blackstrap molasses should not be confused with standard molasses which is not so rich in minerals. Blackstrap molasses is particularly rich in calcium and can be an excellent source of calcium for those who restrict their dairy intake.
Blackstrap Molasses is rich in minerals and can be eaten by the spoon, diluted in hot water and taken as a drink or used in cooking. Include in savoury recipes as a marinade or to enhance stews, roasts and casseroles. In baking it can replace some or all of the sugar content and is particularly good in dark, rich cakes.
