Pastificio Carleschi was founded in 2019 after years of experimenting and refining the perfect the artisan method of producing pasta used today using only British grains. Sourcing directly from British farmers where possible and Aiming to use mostly Organic certified grains. They use grains such as British spelt, Emmer and Einkorn stone ground flour as well as fava beans sourced from some of the most regenerated-minded farmers and millers in the UK
