As times change, some of these cheese are at risk of disappearing forever. Neals Yard Dairy has always championed the small produers, and traditional cheese production methods to ensure they continue to be made. Lots of these cheeses have been made on the same farms for generations, and are a key part of the rural ecomomy, such as they are in our part of the countryside here in Wales.
Industrialisation of cheese making process has made the production of these cheeses even rarer. If we want to continue to enjoy these amazing cheeses, we need to buy them, eat them and continue to enjoy them for generations to come.
