Ghee is an indispensable ingredient in authentic Indian cooking. Ghee, or clarified butter, has a rich nutty flavour. Butter is made into ghee by heating it to remove the water and milk solids. What remains is the butter fat. Ghee has a higher burning temperature than regular butter, so is a great choice for frying.
