Halen Mon - DIY Brine Kit (100g)
Place contents in large saucepan and gently dissolve salt and sugar. Place meat in zip lock bag and pour in brine. Place in fridge or somewhere cool. Rinse meat and cook as usual.
75% Halen Mon Pure Sea Salt PDO, 15% demerara sugar, 7% fennel seeds, 2.5% chilli flakes, 0.5% bay leaves.
