Bio Bardales - Hot Chorizo - organic (100g)
Made from the meat of a herd of pigs that range freely on the dehesa of Andalusia, eating grasses and nuts, supplemented, where necessary with organic cereals before being cured by a specialist family company in Segovia. This chorizo is mildly seasoned with sweet paprika to give a touch of warmth.
ENEBRAL: El Enebral is a small family company devoted to the production of a range of organic cured meats in Segovia, to the north of Madrid. They buy their meat from a farmer who raises a herd of organic, free range pigs on the dehesa of Andalusia and use their butchery and curing skills to produce excellent charcuterie.

This product is made from the meat of the famous iberico pigs of Spain, world renowned for its flavour and aromas. It is produced by rendering down the plentiful fat of the animals to produce a smooth, aromatic lard. It can be used as a cooking fat in making roast potatoes or in baking, to make beautifully light pastry.

La Chinata - Smoked Paprika Powder (70g)
This paprika is produced in La Vera, Extremadura from peppers that have been grown in one of the 52 villages within the DOP. The peppers are smoked by the growers before being sent to the factory. Warm and smoky with a very gentle hint of heat.

Ortiz - Anchovies in Olive Oil (47g)
Ortiz buy their Cantabrian anchovies daily from auctions along the north coast of Spain and process them the same day. They are put into salt for a period of 6-12 months depending on the size of the fish. When ready, they are gently washed, to remove excess salt, and the fish are trimmed and filleted by hand.

Marmitako is a traditional Basque fisherman's stew from with bonito white tuna, potatoes, onion, tomato, and green peppers.
To prepare, place unopened pouch in an uncovered medium-sized saucepan of cold water and heat until boiling. Alternatively empty contents onto a plate, cover and microwave for 2 min.

Ortiz - Salted Whole Anchovies (100g)
Ortiz buy their Cantabrian anchovies daily from auctions along the north coast of Spain and process them the same day. They are put into salt for a period of 6-12 months depending on the size of the fish. When ready the whole fish are packed into tins and covered with salt, to be filleted at home.
It's very easy, you just need to follow these steps:1. Soak the anchovies in cold water for 10 minutes and clean them under running water rubbing the salt off with your fingers.2. Open the anchovy from the top half of the fish while it is still under the tap.3. With the help of your thumb, separate the two anchovy fillets.4. Remove the bone and finish cleaning.5. Dry the anchovies lightly with a cloth, lay them in a container and cover them with your favourite olive oil.
